Oh yeah, it was one of those meals. One that’s not done until every smudge of honey butter glaze is licked off your finger and every tender bit of chicken is gnawed off the bone with your teeth. The slow-roasted honey and lemon chicken was succulent and flavorful.

Instead of pairing it with roasted potatoes and green salad, I turned to Ina for her saffron zucchini herb couscous and added shallots to the sautéing zucchini.

It would be a mistake to think these everyday ingredients make for a simple meal. Very little prep and one hour of cooking render relatively bland cuts of chicken and ‘yet another zucchini’ into something delicious. Something special.
